How selection works

Lots that meet TAKEHISA's internal standard are then examined again by staff who have spent decades on selection. Because each customer's requirement is different, the grade, size mix, and pack format are matched to that requirement rather than to a single house specification, and the packing is done to a standard the merchant is known for.

Retail presentation

Document confirmation

Traceability support, Organic JAS status, certificates, labeling, export and import documentation, and delivery conditions vary by product and order. HACCP-based hygiene management, aligned with Codex HACCP principles, can be documented upon request.

Oita Dried Shiitake Traceability System

The system was established in 2005 to protect the integrity of Oita dried shiitake as a brand. Oita's dried shiitake scores highly at the national competition, which also makes it a target for origin fraud, so participating companies carry a unique identifying number on raw material and finished product and keep records against it, producing a provable chain back to the grower. TAKEHISA participates: covered products carry the identifying number and the Oita Shiitake symbol mark, and the daily work records preserve the history from cultivation through processing.

Documentation for US buyers

  • Organic JAS certification status for the specific lot
