Rehydrated caps come back roughly one size larger than dried, and weight increases about four to five times.

Tenpaku 天白

The highest grade in the donko family, and the rarest.

Tenpaku: a donko cap whose surface has cracked into a pale lattice, beside a cap turned to show its gills.

Specific swings in temperature and moisture crack the surface of the cap into a pale lattice. It is the highest-ranked donko, a few percent of any year's harvest, and demand for it is strongest in Asia.

A size up from standard donko, with aroma and flavor to match.

Large, thick caps with real visual impact. Color and aroma are both strong and the texture after rehydration reads as meat-like, which has made it popular with plant-forward menus and with buyers outside Japan. It also suits gift presentation.

Kouko 香菇

Large caps, thick flesh, an abalone-like bite.

Known in Oita by the local name tsubushi, for mushrooms too large to be called anything else. Thick but still quick to rehydrate, and it presents well enough that in Japan it is handled mainly as a gift product.

Koushin 香信

Open caps, thinner flesh, the everyday working grade.

Koushin: an opened cap, thinner in the flesh than a donko.

The cap has opened and the flesh is thinner, so it rehydrates quickly. It lifts the other ingredients in a dish rather than dominating them, which is what makes it the most generally useful grade TAKEHISA sells. TAKEHISA's koushin is thicker than most.

Re-dried slices

Steamed back, cut, and dried a second time. Slice width and dice size can be specified, including 5 mm dice, 3 mm shred, and 5 mm shred. Used where preparation time matters, such as food service and institutional catering. Contents are agreed by inquiry.

Shiitake powder and processed formats

Discussion-stage formats for product development.

For food manufacturers and product-development teams, shiitake powder may be discussed as a natural umami ingredient. Final specifications, raw-material origin, particle size, quantity, packaging, labeling, and availability must be confirmed before proposal or quotation.

Organic JAS

Log-grown shiitake is raised without the chemical fertilizers or insecticides that other growing methods use. Organic JAS certification goes further: production has to sit where no agricultural chemicals drift in from the surrounding area, and processing has to stay separated from non-organic material throughout. Demand for certified organic product is rising in Japan and abroad, and TAKEHISA handles Organic JAS certified lots.

For US buyers: Japan's Organic JAS scheme and the USDA National Organic Program operate an equivalence arrangement, but scope and documentation change over time and by product. Confirm the current status of a specific lot with TAKEHISA before you label anything.
