TAKEHISA CO., LTD. is approaching its hundredth year.

We have spent that time delivering dried shiitake and staying close to the way Japan eats. The record is long: a Chinese pharmacological text from around the year 500 already describes shiitake as strengthening and restorative, and in Japan the mushroom is said to have arrived around 774 with Kukai on his return from Tang China. The first documentary appearance of dried shiitake is 1237, in Dogen's Tenzo Kyokun. An ingredient that has carried flavor across that many centuries is one we think has to be handed on, and we keep working out how to explain what makes it worth the trouble. One answer has been miso soup. Talking to shoppers, we hear real anxiety about children's health and about how much of that traces back to diet, so at our own store we serve a miso soup built on shiitake, kelp, dried sardine, and bonito, cooked by staff every day. We would like a single bowl to be enough to start someone thinking about food and health. We run cooking classes for the same reason. Times change; the nutrition and the flavor of dried shiitake do not. Communicating that, to trading partners and to the people who eat it, is the work we understand as ours.

1935
Founded as a dealer in bamboo baskets, shochu, and shiitake.
1950
The second generation inherits the mountain-produce wholesale business from the founder, Sadakichi Takehisa.
1965
Takehisa Shoten Co., Ltd. is established, with Susumu Takehisa as president.
1989
The retail store Shiitake Village Hiyoriko opens.
1991
Kazuo Takehisa, the third generation, becomes president.
1993
A new plant building is completed.
1995
The udon restaurant Menraku opens.
2015
The company marks eighty years.
2018
Hiyoriko reopens as a dedicated shiitake store, with Hiyoriko Kitchen alongside it.
